People who have want to safely can food at home this season can attend a home canning workshop to be held 10 a.m. until 3 p.m. on Wednesday, May 14 at the Clay Jones Community Center, Durant. The home canning workshop is sponsored by Bryan Cooperative Extension Service.


Tommie M. James, Bryan County, Extension educator, family and consumer sciences, says this is an ideal workshop for beginners and a great refresher course for those who can.


Taught by Barbara Brown, OSU Cooperative Extension food specialist, the training will cover canning in both pressure and boiling water canners, and raw and hot packing.


“We are so excited to have Dr. Brown to visit our county and share her expertise on home canning methods,” James said. You may be familiar with Dr. Brown’s cooking segment on the Oklahoma Gardening Show aired on Saturday mornings.


“The goal with this workshop is to provide the most up-to-date information on how to can food safely and maintain quality and nutrition,” Brown said.


“Many people in our area put in gardens and often have questions about canning what they grow,” James said.


Brown said the workshop will be hands-on learning.


“We will process both a fruit and vegetable, but the same principles apply when it comes to preserving meat,” she said.


The cost of the canning workshop is $15 and is due when you pre-registry. Pre-registration is required, with a deadline of Friday, May 9, by contacting the Bryan County OSU Extension Office at 924-5312 or e-mail Tommie M. James, FCS Extension Educator at tommiem.james@okstate.edu. The canning workshop is expected to fill up quickly, so those interested are encouraged to register soon.
