The Bryan County Oklahoma Cooperative Extension Services hosted a Healthy Living with Diabetes Cooking School on Thursday.

The class lasted from 1 p.m. until 6 p.m. and taught attendees how to make good food choices and prepare recipes that work well with diabetic meal plans.

The class was instructed by FCS extension coordinator Tommie James and nutrition educator with the Choctaw Nation food distribution program Carmon Robertson.

The class was held at Haggard Hall on the Bryan County Fair Grounds and cost $10 for each attendee. “We have so many people in the county who are diabetic,” said James.

She said this is somewhere these people and their families can come to learn healthier cooking and food preparation methods and dietary tips.

After the classroom portion of the curriculum, attendees were able to cook a meal to share. The meal included Italian Beef Stir Fry and Black Forest Trifle.

All food prepared was made for a diabetic meal plan and attendees received recipes to take home.

They also received a bag with tools to help them with a diabetic meal plan. Each attendee received a cook book and diabetes management information.

According to, James the Extension Services will try to have another class in the upcoming year. No specific dates have been set.
